It might seem weird to find recipes on a Singer/Songwriters website, but we all like to eat, right? These are a few family favourites, and I’ll add to them periodically.

Pasta Fagioli Soup
This is a quick and easy soup we enjoy when the weather turns colder……

28 oz. can diced tomatoes
1 Tsp. chopped garlic
19 oz can white beans, any variety
8 slices bacon, cooked
19 oz can Romano beans
1 tsp. garlic powder
1 large bag of washed spinach
1 ½ tsp. salt
28 oz. lower salt chicken broth
½ tsp. pepper
8 oz. tomato sauce
1 tsp. dried basil
3 cups water
1 ½ cups small seashell pasta
½ cup grated Romano cheese

In a soup pot combine everything except the spinach, pasta and Romano cheese. Bring to a boil then lower heat and simmer for 40 minutes. Add the bacon, and pasta and cook until its tender. Add the spinach until it melts into the soup. You’re done.
Ladle into bowls and top with a sprinkling of the Romano cheese.
This is great with a crusty Italian baguette. It’s even better the next day.
 

English Muffin Loaves
1 Tbsp. sugar
½ cup warm water
2 envelopes of yeast
2 cups milk
2 tsp. salt
6 cups flour
¼ tsp. baking soda
cornmeal

optional: 1 ½ cups grated old cheddar cheese
- 2 Tbsp. orange peel
- 1 cups finely chopped dates and ½ cup walnuts

Dissolve sugar with  warm water
Add 2 envelopes of yeast. Let stand for 10 minutes
Heat milk and salt until lukewarm. Add to the dissolved yeast.
Add 3 cups flour and baking soda.
Stir in 3 more cups of flour
Divide in half and put into 2 loaf pans that have been greased and sprinkled with cornmeal. Sprinkle the tops of the loaves also. Let rise covered for 45 minutes. Bake at 400 degrees for 25 minutes. Slice and toast.
 

Brownies
These are the best brownies!

¾ cup butter, melted
1 ½ cups white sugar
1 ½ tsp. vanilla
3 eggs
¾ cup all purpose flour
½ cup unsweetened cocoa powder
½ tsp. baking powder
½ tsp. salt

Preheat the oven to 350 degrees. Grease a 8 inch square pan.
In a large bowl, blend the melted butter, sugar and vanilla. Beat in the eggs one at a time. Combine the dry ingredients. Gradually blend into the egg mixture. Spread into the prepared pan.
Bake for 35 - 45 minutes until they pull away from the edges of the pan. Cool. Cut into squares and enjoy with a glass of cold milk.
 

Beef Barley Stoup
This recipe could be considered stew or soup so we named it Stoup.
We usually do it in the crock-pot to assure tender meat.

1 ½ - 2 # beef short ribs (with or without bones)
5 cups water
19 oz can. Chopped tomatoes
1 large onion, sliced
2 cups carrots, sliced
1 cup celery, sliced
1 green pepper, chopped
2/3 cup pearl barley
¼ cup parsley
1 Tbsp. beef bouillon
2 tsp. salt
½ tsp. basil, crushed


Turn oven to 350 degrees. Cut the ribs into smaller pieces and place on a foil-lined cookie sheet. Bake until they are nicely browned.
In the crock-pot put the onion, carrots, celery and green pepper.
In a bowl mix the tomatoes, barley, parsley, beef bouillon, salt and basil.
Place the browned ribs on top of the vegetables in the crock-pot. Pour the tomato mixture over. Add the 5 cups of water. Do not stir. Cover. Bake on low for 10 hours or so. Remove the meat. Discard the bones if you have them. Skim the fat off. Shred the meat and return to crock-pot. Season to taste.
 

Ranger Cookies

1 cup butter ½ tsp. baking powder
2 eggs ½ tsp. salt
1 cup white sugar 2 cups. flour
1 cup brown sugar 2 cups quick oats
1 tsp. vanilla 2 cups rice krispies
1 tsp. baking soda 1 cup shredded coconut

Cream together the butter and sugars. Add the eggs and vanilla. Mix until smooth. Sift the flour, soda, baking powder and salt. Add to the sugar mixture. Add the oats, rice krispies and coconut. Drop by spoonfuls onto a cookie sheet. Press down with a fork.

Bake at 375 degrees for 7 minutes. These cookies freeze well.

Laurel’s Spice Rub

  • ½ cup brown sugar
  • ½ cup paprika
  • ½ cup black pepper
  • ¼ cup chili powder
  • ¼ cup salt
  • 1 Tablespoon dry mustard
  • 1 Tablespoon garlic powder

Mix together all the ingredients until smooth. This rub is excellent for any barbequed meats including chicken breasts, steak and salmon and even hamburgers.

We also enjoy it on roasted vegetables. Coat vegetables with olive oil. Sprinkle on some spice rub. Roast at 400-425 till tender.

My Mom’s Scones

  • 3 cups all purpose flour
  • 3 teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup brown sugar
  • 1 cup raisins or dried cranberries
  • 1 cup cold butter
  • 1 cup milk or buttermilk
  • 1 egg (separated)

Mix the flour, salt, baking powder and brown sugar together. Cut or rub in the cold butter until pea sized. Add the raisins. Mix the slightly beaten egg white with the milk and add. Knead a few times to incorporate. Pat into a disc and cut into triangles. Mix the egg yolk with a little water and brush the tops of the scones. Bake at 375 degrees in the middle of the oven for 12 or more minutes until golden brown. Enjoy.

Spicy Meatball Sandwiches

  • 1 ½ - 2 pounds of hamburger
  • ½ teaspoon salt
  • 1 egg
  • 1 lemon, sliced
  • 1 pkg. Onion soup mix
  • 2 Tablespoons margarine
  • 2 cloves garlic
  • 2/3 cup chili sauce
  • 1 cup ketchup
  • 2 Tablespoons Worcestershire
  • ¼ cup packed brown sugar
  • 2 teaspoons celery seed
  • 2 Tablespoons prepared mustard
  • ¼ teaspoon tabasco sauce
  • 6 crusty buns

Combine the hamburger, egg and the onion soup mix. Make into meatballs and fry up or cook under the broiler.

To make the sauce, saute the garlic in the margarine. Then add the remainder of the ingredients. Simmer 20 minutes. Remove the lemon slices. Slice the buns and hollow out the centres. Serve the meatballs and sauce inside the buns. Top with some sliced onion if desired.

Yvonne’s Cheese Bread

  • 8 oz. Velveeta cheese grated or ½ pkg. of slices
  • ¼ cup butter (or less if you prefer)
  • 2 Tablespoons Hellmans light mayonaisse
  • Garlic powder and salt and pepper to taste
  • 4 sliced green onions
  • 1 large or 2 smaller loaves of French bread

Melt the butter in the microwave. Add the cheese and melt together. Add the rest of the ingredients. Cut the loaf of bread in half length wise. Spread the surfaces with the cheese mixture.

Bake at 350 degrees for 10-20 minutes until heated through and bubbly. Slice and enjoy.

My Dad’s Favourite Cake

  • 4 oz. Sweetened chocolate
  • 2 ¼ cups sifted flour
  • ½ cup boiling water
  • 1 teaspoon baking soda
  • 1 cup butter
  • ½ teaspoon salt
  • 2 cups Sugar
  • 1 cup buttermilk
  • 4 egg yolks
  • 4 egg whites
  • 1 teaspoon vanilla

Melt chocolate in water. Cool. Cream the butter and sugar until fluffy. Add egg yolks one at a time. Beat well. Blend in the chocolate and vanilla. Sift the dry ingredients together. Add alternately with the buttermilk to the chocolate mixture. Beat until smooth. Beat the egg whites. Fold in. Pour into 3 - 9 inch cake pans lined with parchment and greased. If the pans are deep you only need 2.

Bake at 350 degrees for 30 - 35 minutes. Cool.

Coconut Pecan Frosting

Combine - 1 cup evaporated milk, 1 cup sugar, 3 slightly beaten egg yolks, ½ cup butter and 1 teaspoon vanilla in a saucepan. Cook and stir over medium heat until thick ( approx. 12minutes )

Add - 1 1/3 cups angel flake coconut and 1 cup chopped pecans.

Cool until thick enough to spread. Beat occasionally. Makes 2 ½ cups.

Frost the cake between the layers but not on the sides.

Siggie Cain’s Barbeque Sauce

  • 5 Tablespoons butter
  • 1 small chopped onion
  • 1 cup ketchup
  • 3 Tablespoons brown sugar( or more )
  • 4 teaspoons chili powder
  • 2 teaspoons dry mustard
  • Salt and pepper
  • ½ cup lemon juice (the real stuff)

Brown 2 # of chicken pieces or pork chops in the oven. In a saucepan cook together the butter and the onion. Add the rest of the sauce ingredients. Simmer for 20 minutes. Taste and adjust sweetness as needed.

Place meat in a casserole dish. Pour the sauce over the meat. Bake in a 350 degree oven covered for 1 hour or so.

Enjoy with rice or mashed potatoes.
